Melon with Parma Ham


(SERVES 6)
  • 1 honeydew melon, cut into 6 slices
  • 6 wafer-thin slices lean Parma ham
  • 6 cherry tomatoes
  • 6 parsley sprigs
Remove the rind from the melon and cut each wedge into two thin wedges. Halve the ham slices width-ways. Wrap a piece of ham round the centre of each piece of melon and arrange on serving plates. Garnish each plate with a cherry tomato and a parsley sprig.
