(SERVES 6)- 3 grapefruit
- 30 ml/6 tsp port
- A pinch of artificial sweetener granules
- 75 g/3 oz ¾ cup stilton cheese , crumbled
Halve the grapefruit. Cut all round the fruit between the flesh and the pith, then loosen each segment each side of the membrane with a serrated-edged knife. Place in fireproof dishes on the grill (broiler) tray. Mix the port with a pinch of artificial sweetener granules and spoon over each fruit. Scatter the crumbled cheese over. Grill (broil) for about 4 minutes until the cheese melts and bubbles. Serve straight away.
