Spiced Melon and Clementine Cocktail


(SERVES 6)
  • 1 honeydew melon
  • 3 Clementine’s
  • 2 pieces stem ginger in syrup, chopped
  • 45ml/3 tbsp apple juice 6 mint sprigs
Halve the melon and discard the seeds. Scoop out the flesh with with a melon baller or spoon and place in a bowl. Peel and segment the clemen-tines and add with the ginger and apple juice. Chill for at least 1 hour to allow the flavours to develop. Spoon into glass dishes and garnish each with a mint sprig.
