Greek-style Tomato Platter


(SERVES 6)
  • 8 ripe tomatoes, sliced
  • 100 g/4 oz/1 cup Feta cheese, crumbled
  • 8 black olives, stoned (pitted) and sliced
  • 15ml/1 tbsp white wine vinegar
  • 15 ml/1 tbsp olive oil
  • Freshly ground black pepper
Arrange the tomato slices on six small serving plates. Scatter the cheese, olives and herbs over. Whisk together the vinegar and oil and drizzle over. Add a good grinding of black pepper and serve.
