(SERVES 6)- 3 grapefruit
- 300 g/ 1 oz/1 small can mandarin orange juice
- 6 maraschino cherries
Halve the grapefruit. Cut all around the fruit between the pith and the flesh, then remove the flesh in segments, cutting either side of each membrane. Place in a bowl with any juice. Scoop out the membranes and central core and discard, reserving the grapefruit shells. Add the contents of the can of mandarins to the grapefruit and mix well. Chill. Just before serving, place the grapefruit shells in glass serving dishes. Spoon in the grapefruit and mandarin oranges with the juice and top each with a maraschino cherry.
