Baked Ham and Cheese Open Sandwich


(SERVES 2)
  • 2small pieces bread
  • 20 ml/4 tsp low-fat spread
  • 2 thin slices lean ham (from a packet)
  • 2 spring onions (scallions), finely chopped
  • 2 slices low-fat processed cheese
  • 2 tomatoes, sliced
  • Chopped parsley
Spread the bread with 5 ml/1 tsp low-fat spread on each side. Place on a baking sheet. Top each with a slice of ham, then sprinkle with spring onion. Top with the processed cheese. Bake in a preheated oven at 200degree C/400 degree F/gas mark 6 for 10 minutes. Top with tomato slices and return to the oven for 5 minutes. Serve hot, garnished with parsley.
