Croque Madame


(SERVES 1)
  • 2 slices bread
  • 10 ml/2 tsp low-fat spread
  • 40 g/ ½ oz/3 tbsp low-fat Cheddar cheese grated
  • ½ small onion, thinly sliced and separated into rings
  • 5 ml/1 tsp chopped sage
Spread one side of each bread slice with 5 ml/1 tsp low-fat spread. Lay one slice, spread side down, on a board. Top with the cheese and onion rings. Sprinkle with a sage. Top with the second bread slice, spread side out. Fry (sauté) or grill (broil) until golden on both sides, pressing down with a fish slice during cooking, Serve cut into quarters.
