Oriental Noodle Soup


(SERVES 6)
  • 1.75 litres/3 pts/ 7 ½ cups beef stock, made with 3 stock cubes
  • 5 ml/1 tsp finely chopped lemon grass
  • 10 ml/2 tsp soy sauce
  • 175 g/6 oz vermicelli, broken into small pieces
Bring the stock to the boil with the lemon grass and soy sauce. Add the vermicelli and simmer for 6 minutes until the noodles are tender. Taste and re-season if necessary.
