Liver Sausage and coleslaw Pitta Pockets


(SERVES 2)
  • 2 pitta breads
  • 4 slices liver sausage
  • 30 ml/2 tbsp low-calorie coleslaw (ready-made)
  • 1 spring onion (scallion), finely chopped
  • 4 slices beetroot (red beet)
Warm the pitta breads under the grill (broiler) or in the microwaves briefly to puff them up. Split along one edge to form a pocket. Fill each pitta with half the liver sausage, coleslaw, spring onion and beetroot slices and serve straight away.
