Sardine Pyramids


(SERVES 2)
  • 2 crumpets
  • 10 ml/2 tsp low-fat spread
  • 120 g/4 ½ oz/1 small can sardines in tomato sauce
  • 2.5 cm/1 in piece cucumber, finely chopped
  • Lemon juice
  • Freshly ground black pepper
  • Small lemon twists
Toast the crumpets and spread with the low-fat spread. Meanwhile, mash the sardines with their bones and mix with the cucumber and a squeeze of lemon juice. Season to taste with pepper. Pile on the crumpets and garnish each with a small lemon twist.
