Tortilla


(SERVES 2)
  • 1 large potato, grated
  • 1 small onion, thinly sliced
  • 15 g/ ½ oz/1 tbsp low-fat spread
  • 4 eggs, beaten
  • Salt and freshly ground black pepper
  • Parsley
Put the potato and onion in a frying pan (skillet) with low-fat spread. Fry (sauté), stirring, for 5 minutes until the potato is cooked. Beat the eggs with a little salt and pepper and add to the pan. Cook gently, lifting and stirring, until the egg is almost set. Place under a hot grill (broiler) to brown and set the top. Serve hot or brown and set the top. Serve hot or cold, cut into wedges.
