Croque Tante


(SERVES 1)
  • 2 slices bread
  • 10 ml/2 tsp low-fat spread
  • 2 lean rashers (slices) streaky bacon, rinded
  • 1 small banana, mashed
  • A pinch of cayenne
Spread one side of each bread slice with 5 ml/1 tsp low-fat spread. Put one slice, Spread side down, on a board. Grill (broil) the bacon until crisp. Spread the mashed banana on the bread and crumble the bacon on top. Sprinkle with cayenne. Top with the second bread slice, spread side up. Grill or fry (sauté) until golden on both sides, pressing down with a fish slice during cooking. Serve cut into quarters.
