Pan Haggerty


(SERVES 4)
  • 25 g/1 oz/2 tbsp low-fat spread
  • 450 g/1 1b potatoes, thinly sliced
  • 2 onions, thinly sliced
  • 100 g/4 oz/1 cup low-fat Cheddar cheese, grated
  • Salt and freshly ground black pepper
  • Lettuce and tomato slices, to serve
Melt the low-fat spread in a frying pan (skillet). Add a layer of half the potatoes and onions, then half the cheese. Season well. Repeat the layers. Cover the pan with foil or a lid and cook over a gentle heat for about 30 minutes or until the potatoes and onions are tender. Uncover and place the pan under a hot grill (broiler) until the cheese is golden and bubbling. Serve cut into wedges on a bed of lettuce, surrounded by tomato slices.
