American-style Fish fingers


(SERVES 1)
  • 2 fish fingers
  • 1 gherkin (cornichon), finely chopped
  • 5 ml/1 tsp chopped parsley
  • 10 ml/2 tsp low-calorie mayonnaise
  • 1 small soft bap, halved
  • Shredded lettuce
  • 1 slice low-fat processed cheese
Grill the fish fingers according to the packet directions. Mix the gherkin and parsley into the mayonnaise. Spread on the bottom half of the bap. Top with shredded lettuce, then the fish fingers, then the slice of cheese. Flash under a hot grill (broiler) to melt the cheese. Top with the second half of the bap.
