Cheese Sage and Onion Melties


(SERVES 4)
  • 4 large unpeeled potatoes
  • 100 g/4 oz/1 cup low-fat Cheddar cheese, grated
  • 25 g/1 oz/2 tbsp low-fat spread
  • 15 ml/1 tbsp chopped sage
  • ½ bunch of spring onions (scallions), finely chopped
  • Freshly ground black pepper
Scrub the potatoes and prick all over with a fork. Bake in a preheated oven at 190 degree C/ 375 degree F/gas mark 5 for about 1 hour or until the potatoes feel soft when squeezed. Alternatively, cook in the microwave according to the manufacturer`s instructions. Meanwhile, mash the cheese with the low-fat spread, sage, spring onions and some pepper. Cut a large cross in each potato and squeeze the sides gently to open. Place on four small flameproof plates. Top with the cheese mixture and place under a hot grill (broiler) until the cheese has melted. Serve straight away.
