Buck Rarebit


(SERVES 2)
  • 15 g/ ½ oz/1 tbsp low-fat spread
  • 100 g/4 oz/1 cup low-fat red Leicester cheese, grated
  • A pinch of salt
  • A pinch of cayenne
  • 30 ml/2 tbsp milk
  • Worcestershire sauce
  • 5ml/1 tsp lemon juice
  • 2 eggs
  • 2 slices toast
Put the low-fat spread in a saucepan with the cheese, salt, milk and a few drops of Worcestershire sauce. Heat gently until melted, stirring occasionally. Meanwhile, bring a frying occasionally. Meanwhile, bring a frying pan (skillet) of water to the boil with the lemon juice. Break the eggs into a cup, then carefully slide into the water and cook gently for 3-5 minutes until set. Put the toast on two warmed. Serving plates, Spoon the cheese mixture over and top with a poached egg.
