Pea and Ham soup in a Hurry


(SERVES 6)
  • 1.2 litres/2 pts/5 cups ham stock, made with 2 stock cubes
  • 225 g/8 oz/2 cups frozen peas
  • 50 g/2 oz ½ cup cooked ham, chopped
  • 60 ml/4 tbsp skimmed milk
  • Salt and freshly ground black pepper
  • A good pinch of grated nutmeg
Simmer the peas in the stock in a saucepan for 3 minutes. Puree in a blender or food processor and return to the pan. Add the chopped ham and milk and heat through. Season to taste with salt, pepper and nutmeg and serve hot.
