Maybe Chicken Chow Mein


(SERVES 4)
  • 250 g/9 oz/1 packet quick-cook Chinese egg noodles
  • 225 g/8 oz/2 cups cooked chicken, skin removed, cut into strips
  • 425 g/15 oz/1 large can stir-fry mixed vegetables, drained 1 garlic clove, crushed
  • 30 ml/2 tbsp soy sauce
  • 30 ml/2 tbsp dry sherry
  • 5 ml/1 tsp ground ginger
  • 1.5 ml / ¼ tsp artificial sweetener granules, or to taste
Cook the noodles according to the packet directions. Drain. Put the chicken in a large pan
or wok. Rinse the drained can of vegetables under cold water, drain again and add to the
chicken with the remaining ingredients. Heat through, stirring occasionally, until piping
hot. Stir in the drained noodles until well coated. Reheated serve.
