Chilled Prawn and cucumber Soup


(SERVES 6)
  • 1 large cucumber
  • 450 ml/ ¾ pt/2 cups buttermilk
  • 450 ml/ ¾ pt/2 cups skimmed milk
  • 225 g/8 oz/2 cups peeled prawns (shrimp)
  • 1 large green (bell) pepper, chopped
  • 5 ml/1 tsp dried dill (dill weed)
  • Salt and freshly ground black pepper
Cut six slices off the cucumber and reserve for garnish, wrapped in Clingfilm (plastic wrap). Peel and finely chop the remainder. Place in a large bowl with a lid. Add the remaining ingredients, seasoning to taste. Chill for several hours or overnight. Ladle into chilled bowls and float a slice of cucumber on each to garnish.
