(SERVES 4)
- 4 skinless chicken fillets, about 175 g/6 oz each
- 20 g/ ¾ oz/1 ½ tbsp low-fat spread, melted
- 4 tomatoes, chopped
- 4 thin slices lean ham (from a packet)
- 75 g/3 oz / ¾ cup Emmental (Swiss) or low-fat Cheddar cheese, grated
- Watercress sprigs
- Mixed Leaf salad
meat mallet to flatten. Brush with the low-fat spread and place on a grill (broiler) rack.
Grill (broil) for 3 minutes. on each side. Spread the chopped tomato over, then the ham and
top with the cheese. Grill until the cheese is melted and golden. Garnish and watercress
and serve straight away with a mixed leaf Salad.
