Beany Spuds


(SERVES 4)
  • 4 large unpeeled potatoes
  • 400 g/14 oz/1 large can baked beans
  • 20 ml/4 tsp brown table sauce
  • 50 g/2 oz ½ cup low-fat Cheddar cheese, grated
Scrub the potatoes and prick all over with a fork. Bake in a preheated oven at 190degree C/375 degree F/gas mark 5 for about 1 hour or until tender when squeezed. Alternatively, cook in the microwave according to the manufacturer1s instructions. Meanwhile, heat the beans. Cut a cross cut in the top of each potato and squeeze the sides firmly to open. Place on four flame-proof serving plates. Spoon the beans over, drizzle with brown sauce, Top with cheese and flash under a hot grill with cheese and flash under a hot grill (broiler) to melt the cheese.
